Empirical is a flavour company founded in 2017 and located on Refshaleøen. Focusing on flavour, our company uses low-temperature distillation, fermentation, and unique, high-quality ingredients sourced carefully from all over the world. The result is culinary innovations in the world of spirits, beverages and food products.

THE POSITION
We are looking for a restless soul to join our Production team, more specifically, our Koji production.
Koji it’s a technique behind many asian products like miso, shoyu and obviously, sake. It’s a key part of our process and we a passionate person to join us in this journey.
This position is for you that are passionate about fermentation, that is interested about different techniques to develop flavour and wants to develop a career related to the universe behind Koji production.
It’s a challenging role and it will require you to have both physical and mental endurance to master this amazing craft.
RESPONSIBILITIES
Execute the production schedule and recipes for Koji
Execute the day-to-day tasks and general maintenance in the Koji Room
Improve process and quality control of all Koji related production
Collect data, update logs and track relevant information from Koji production process
REQUIREMENTS
Basic understanding of Koji making process
Team work attitude
Stamina to perform physical work (important)
Outstanding organisational and detailed oriented
Pro-active and problem-solving aptitude
Excellent communication skills (English)
Good analytical ability
Good grasp of safety guidelines
Flexibility to work in different shifts (AM, PM)
Permit to work full-time in Denmark
