We are looking for a Gastronomic chef to spearhead a new Fresh.Land flagship store in a historical building at CPH harbour front. The menu consists of simple, yet delicious interpretations of "classics", such as "avocado on ryebread" made of the best organic ingredients from Fresh.Land farmers. The style is Nordic Cuisine, a bit "Noma"-inspired, but more low-key. The shopspace is only 25m2 with "grab'n'go" possibility and servings in a green outdoor space, where we plan to built an "orangerie".
You will be managing the day-to-day operations of the kitchen and the shop:
Continuously innovate the menu with the change of season in raw ingredients from our farmers
Deliver excellent service and ensure high customer satisfaction
Plan and develop the overall strategy of the Concept-store/cafe
Work in the shop yourself and organize and supervise shifts
Estimate consumption, forecast requirements and maintain inventory
Ensure profitability and minimize waste
Nurture a positive environment
Implement innovative strategies to improve productivity and sales
Job requirement
2-4 years of work-experience from Michelin-level restaurant or similar
Gastronomic innovator and creative mind
Strong sense of ownership, hard-working and dedicated
Passionate about Fresh.Land's vision of building a more sustainable food system
People Management skills, interpersonal skills and creating a good vibe
Strong economic skills and track record in controlling costs and minimizing waste
