Based in Copenhagen, Empirical Spirits is a platform to investigate flavor, traditions, technologies, and techniques from across the globe. It’s a springboard to re-examine how we build deliciousness, launch dialogues and create a whole bunch of novel libations along the way. As we craft our unique flavour profiles, every parameter of our liquid is considered; from the local heirloom grains and bespoke yeast strains, down to our in-house koji production and proprietary distillation technology.


As the Production Manager, you will ultimately be responsible for the smooth running of all production lines and systems. We are looking for someone who is a strong trainer, who is able and willing to mentor staff members, has meticulous attention to detail, and is extremely organized. The Production Manager will assist and answer to the Creative Director and the Head of Production.

Empirical is a company in which we take our curiosity into the distilling world, using our knowledge of other mediums to try and create unique products while looking at the entire process in a different way. As such, we are in need of the right person who not only has that mentality, but is also willing to scale and produce the products that are created by the Creative Director and the Head of Production. Our company is a growing company in its preliminary stages, and so flexibility and commitment are valuable assets that we are looking for. 

Our goal is to have a smooth running production team that provides a creative and consistent product to our guests. This is an ever-expanding position, and we are looking for a candidate with a strong entrepreneurial spirit. 

Responsibilities:

  • Koji production, including soaking and steaming of barley, proper cooling and inoculation techniques, troubleshooting the process, and proper packaging of koji. Responsible for the cleanliness of the koji room as well as any and all sanitary measures of the entire process. 
  • Mash production, including ordering and stocking of grains, the entire mashing process, including any and all documentation of each process and measuring brix levels and temperature.
  • Yeast fermentation, including an understanding of proper yeast amounts per pitch, the documentation of batch numbers, plato, temperature and pH levels, and overseeing the entire fermentation process leading up to distilling.
  • Distilling, including a complete understanding of the equipment used, the documentation needed for approval by the health board, operating the still, making cuts, and preparing tastings of each cut for the Creative Director and the Head of Production. 
  • Blending and bottling product, under the guidance of the Creative Director and the Head of Production, including an understanding of the bottling, labelling, and sealing methods used, as well as an understanding of proper storage of our product. Responsibilities also include documentation of all processes attached to the blending and bottling of product, including inventory. 
  • Inventory of any and all food products in the building.
  • Maintaining a professional and harmonious relationship with all of our suppliers
  • Documentation of temperature logs, kitchen cleaning lists, product receiving forms, and a strong knowledge of our Hygiene Control Program
  • Training and mentoring interns and future employees, based on our Employee Handbook, to promote the Empirical culture and philosophy on any and all employees who join our production team
  • All daily operations of the facility, including connecting with landlords regarding garbage pick up and pest control, ordering chemicals for the dishwasher and other cleaning through Ecolab, and general cleanliness of the space. 
  • Inquiring of ordering small equipment for daily operations
  • Meticulous attention to detail in all aspects of production, but especially in blending and bottling (no debris in spirit, labelling and sealing of bottles consistently)


Experience:

  • Driver’s license
  • Fluent in English, Danish is an asset but not necessary
  • Previous experience in the Food and Beverage Industry is a plus but not necessary
